# Nasi Goreng

## Origin

Nasi goreng emerged from the meeting of Chinese stir-fry technique (a way to use up day-old rice) and Indonesian spice traditions. Every island has a variation—Betawi goat-meat nasi goreng, sweet-spicy Javanese, curry-spiced Acehnese.

## Flavor Profile

The signature note is *kecap manis*, Indonesia's sweet soy sauce, which delivers a dark, savory-sweet edge with a hint of smoke when it kisses a screaming-hot wok. Garlic and shallot build savoriness; chili adds heat.

## How It's Served

Always hot, almost always with a sunny-side-up egg, prawn crackers, sliced cucumber and tomato, and pickles. Late-night cart vendors add shredded chicken, meatballs, or shrimp.
