# Rendang

## Origin

Rendang was born in the Minangkabau highlands of West Sumatra as a ceremonial dish and a travelers' staple. The Minang tradition of *merantau* (migration for trade or learning) demanded food that kept without refrigeration—so cooks reduced beef in coconut milk for hours until the liquid disappeared and the spices crystallized.

## Flavor Profile

The taste is layered: chili heat, the perfume of ginger, galangal, and turmeric, and a deep caramelized sweetness from slow-reduced coconut. The dark-brown "dry" rendang is considered the most authentic; "wet" rendang is a younger, milder cousin found mostly outside West Sumatra.

## How It's Served

Rendang is the centerpiece of Padang restaurant fare, served with steamed rice and jackfruit curry. It also travels brilliantly in a lunchbox—the flavor actually deepens overnight.
